Hello you wonderful people,
are you still a little bit tired from the weekend and an exhausting Monday? You don’t want to spend your whole lunch-break or evening cooking, rather relax and recover your strength for the rest of the week ?But you still want to eat some delicious home-cooked food? I found a great solution for you → this easy vegetarian Risotto :)
Usually Risotto takes a long time and you need to stay in the kitchen and stir the rice all the time, constantly adding some more water etc. Don’t get me wrong – I love risotto. But sometimes for me it’s too much of a hassle. But not with this recipe.
All you need is:
- 200gr risotto rice
- 1 medium size onion
- 3-4 carrots
- 150gr frozen peas
- 200gr shredded cheese (I usually use gauda)
- curcuma (it’s a spice and gives the rice it’s yellow color – I use about 2-3 tsp. but it depends on how much you like the taste of the spice, if you don’t like it that much just put a little but in the risotto for the color ;) )
- 400ml vegetable broth
- some parsley for garnishing the risotto
First you chop the onions and carrots into small dices.
Turn your stove to medium/high heat. Heat up a little bit of olive oil and fry the onions until they have softened. Add the carrots and fry for another few minutes.
Now add the risotto rice and also fry it for a little bit at medium heat. After about 3 minutes at high heat- deglaze everything with the 400ml vegetable broth.
Add the curcuma and the frozen peas. Close the lid of the pan. Turn down the heat to low and let it sit there for 30 min. You might want to check on the risotto every once in a while and if needed add some more water but usually the risotto turns out great if you just let it sit for 30 min.
After 30 min all the water should be gone (if not, open the lid and let the risotto sit for a few minutes more), now is the time where you can mix the cheese into the risotto. I loooove cheese and it makes the risotto sooo creamy, but of course as always if you’re not a great cheese fan, don’t mix all of the 200gr in the risotto. Just add as much as you like.
Serve the risotto and add some parsley on top of it and voilà you have a super easy delicious risotto.
