Hello you wonderful people,
as a vegetarian I’m a vegetable lover :) I looove cauliflower, or broccoli, carrots or just any kind of vegetable (besides mushrooms :D , but that’s a different story). And what better way to throw in all kinds of different vegetables than to make a good curry??
This recipe I made for 4 people and I used:
- 5 carrots
- 1/2 cauliflower
- 1 broccoli
- 1 onion
- 200gr mushrooms ( I wasn’t just cooking for myself and my guests like mushrooms)
- 2 peppers
- 1 chilli
- 250gr couscous
- red curry paste
- coconut milk
- coconut oil
What I usually start with is chopping everything up. I just like having everything ready before I heat up the pan, but that’s just the way I like to do it. For me this way is just waaaay less stressful then chopping while cooking and things get burned and yeah, it just works better for me this way.
So Step 1:
chop everything the way you like it. The broccoli and cauliflower should be into very small pieces so they don’t take too long to be well-done in the pan.
Before you put the oil in pan put the curry in and turn on medium heat. This way the curry gets to unfold it’s true flavors.
Add the coconut oil and wait a minute until the oil is hot.
Put the curry paste in the pan. Also let this heat up.
When the paste is like this you want to first put in the onions and small pieces of chili.
Add the carrots.
Add the cauliflower and broccoli.
Add the peppers and mushrooms.
Stir and add some coconut water from the coconut milk if needed.
Let all the vegetables heat up and stir occasionally.
Add coconut milk and taste the curry. If there is still some flavor missing, add some salt, more curry or a little more of the red curry paste.
While the curry is sitting there cooking along, boil up some water (for 250gr of couscous you will need 300ml of water) with one tablespoon of vegetable oil and some salt.
Once the water is boiling take the pan of the stove, put the couscous in the water. Close the lid and just let it sit for around 5min. If wanted you can mix some butter in the couscous to make it more creamy.
When the couscous is ready and the vegetables reached the level of tenderness you like just take everything of the stove and serve a delicious healthy Veggie Curry.
